500g Salmon

[thick end of the fillet, pin boned & skinned]

200ml Black Cow Vodka

1 Lemon zest and juice

Serves 6

1 Lime zest and juice

1 Grapefruit, skinned segments

60g Sea salt

40g Caster sugar

Vegetable Oil

1tsp Honey, runny

1 Handful rock samphire

12 thumb size sprigs of dill

Extra virgin rapeseed oil
