Just because you're feeding the family on a budget it doesn't mean your meals can't be exciting!
This orzo recipe is not only nutritious but also extremely delicious.
For the Meatballs
500g Lamb Mince
1 Onion
1 Egg
100g Breadcrumbs
Handful of Fresh Mint
Handful of Fresh Oregano
3tbsp Oil
2 Garlic Cloves
1x Tin Chopped Tomatoes
For the Orzo
600g Orzo
80g Butter
1 Garlic Clove
800ml Vegetable Stock
1 Tin of Chickpeas
200g Peas
200g Broad beans
100g Feta
1 Lemon
Handful of Fresh Oregano
Salt & Pepper
For the Tzatziki
250g Greek Yoghurt
1/2 Cucumber
1/4 Small Garlic Clove
1 Lemon
Handful of Fresh Mint
Recipe
To start, add the mince, 1 clove of finely chopped garlic, mint, seasoning, egg & breadcrumbs to a bowl.
Use your hands to combine the ingredients.
In a large frying pan add half of the oil.
Roll the meatball mix into small balls, approx. 3cm & add to the pan. Heat over a medium heat, turning occasionally, until all of the meatballs have browned.
Once browned, transfer to a large dish.
Start to make the meatball sauce by dicing the onion & 1 garlic clove. Add to a large pan along with seasoning & the rest of the oil. Cook over a low heat until the onions have softened.
Whilst the meatballs are cooking, start to cook the orzo.
Begin by adding the butter & 1 chopped garlic clove to a large pan & cook over a low heat until the butter has melted, then stir in the orzo making sure it’s well coated in the butter & garlic.
Add half of your stock & cook the orzo for 8 minutes.
Then, add the broad beans, peas & chickpeas & continue to cook over a low heat. Add more stock when required to keep the orzo wet. Stir occasionally.
Now the orzo is cooked, dice the feta & add to the pan, along with the lemon & chopped mint.
Top Tip: Don’t over-stir here, the feta should still be in small chunks not completely mixed in.
To make the tzatziki, grate the cucumber & finely chop the mint. Add this to your Greek yoghurt along with the salt, pepper & lemon juice & mix.
Remember to squeeze the water from your cucumber before adding it to the mixture.
Plate up your orzo & meatballs & serve with the tzatziki.
