Pastry, caramelised leeks, sweet figs, and creamy cheese come together in this irresistible Christmas vegetarian main.

For Pastry
• 315g plain flour
• 4 tablespoons sugar
• ½ teaspoon salt
• 230g butter (cold, unsalted, cut into pieces)
• 115g sour cream
• 120ml ice water
For Filling
• 1 tablespoon olive oil
• 2 large leeks
• ½ teaspoon salt
• ½ teaspoon pepper
• 115g goat cheese
• 455g figs
• 1 egg
• 1 tablespoon fresh thyme
• 2 tablespoons honey
Recipe
Make the dough: Pulse flour, sugar, and salt in a food processor. Add butter and pulse to coarse crumbs. Add sour cream and ice water; pulse until just combined.
Assemble galette: Roll out one dough disk to a 12” round on a floured surface. Transfer to the sheet. Layer leeks, goat cheese, and figs in the center, leaving a 1.5” border.
Fold and brush: Fold edges over the filling, brush with egg wash, and season with pepper. Repeat with remaining dough and ingredients.
Bake: Bake for 30 to 45 minutes or until golden at 200°c. Cool for 10 minutes, garnish with thyme, drizzle with honey, slice, and serve.
Tip: Set your Caple oven onto the Turbo Base Heat setting to get a nice crispy bottom of the Galette using the AIRFRY tray
